Veggie Chili
ingredients
- 1 TBSPN vegetable oil
- 1 c. finely chopped onion
- 1 c. chopped red bell pepper
- 1 tsp. minced garlic
- 1 28-oz. can crushed tomato
- 1 can black beans, rinsed and drained
- 1 can chick peas, rinsed and drained
- 1/2 c. corn
- 2 cans chicken or vegetable broth
- 1 tsp. sugar
- 1 tsp. ground cumin
- 1 tsp. basil
- 1 tsp. chili powder
- 1/4 tsp. pepper
- Sour cream, optional

In a large soup pot, heat oil. Add onions, pepper, and garlic. Saute 5 minutes. Add remaining ingredients. Bring to a boil, reduce heat, simmer at least 8 - 10 minutes.

Serve and top with a spoonful of sour cream, if desired. Enjoy!
notes
Tip #1: Instead of fresh, use the pepper and onion mix blend found in the freezer aisle. Tip #2: Throw the ingredients in a crock pot and let it cook all day.
