Barbecue Chicken/Parmesan Chicken Chunks

ingredients

  • 1.Barbecue Chicken
  • 12 chicken pieces bone in
  • 2 onions chopped
  • 1 cup Italian tomato sauce
  • 1 tsp. salt
  • 1 tsp. basil
  • 2 cups honey
  • 1/2 cup organic chicken broth
  • 2 tsp. hot sauce or to taste
  • 1 tsp. dry mustard
  • 1/2 cup dry red wine
  • Parmesan Chicken Chunks
  • 6 Chicken breasts cut in chunks
  • 1 cup smashed rice crackers or rice bread crumbs
  • 1/2 cup fresh grated Parmesan cheese
  • 1/3 cup ground pecans
  • 1 tsp. thyme
  • 1 minced garlic clove
  • 1/2 tsp. tarragon
  • 1/2 tsp. salt

    Method One

    Sauté onions

    Add rest of ingredients

    Cook for 15 min.

    Pour sauce over chicken pieces

    Marinate for a few hours

    Barbecue on low heat

    Mix all ingredients except chicken

    Roll chicken chunks in dry mixture

    Bake 400F for 20 min and turn once during cooking

These are great family dinners served with a salad and rice or roasted potatoes.
