Barbecue Chicken/Parmesan Chicken Chunks
ingredients
- 1.Barbecue Chicken
- 12 chicken pieces bone in
- 2 onions chopped
- 1 cup Italian tomato sauce
- 1 tsp. salt
- 1 tsp. basil
- 2 cups honey
- 1/2 cup organic chicken broth
- 2 tsp. hot sauce or to taste
- 1 tsp. dry mustard
- 1/2 cup dry red wine
- Parmesan Chicken Chunks
- 6 Chicken breasts cut in chunks
- 1 cup smashed rice crackers or rice bread crumbs
- 1/2 cup fresh grated Parmesan cheese
- 1/3 cup ground pecans
- 1 tsp. thyme
- 1 minced garlic clove
- 1/2 tsp. tarragon
- 1/2 tsp. salt

Sauté onions

Add rest of ingredients

Cook for 15 min.

Pour sauce over chicken pieces

Marinate for a few hours

Barbecue on low heat

Mix all ingredients except chicken

Roll chicken chunks in dry mixture

Bake 400F for 20 min and turn once during cooking
