Hot Coconut Ginger Shrimp

ingredients

  • 1 lb large shrimp, peeled
  • 1/4 cup grated fresh ginger
  • 1-14 oz can coconut milk
  • 2 tbsp. soya sauce
  • 2 tsp. sesame oil
  • 2 tsp. hot chilli garlic sauce
  • 2 cups snow peas
  • 1/2 sweet red pepper (matchstick pieces)
  • 3 green onions
  • Fresh coriander leaves
  • 1 lime

directions

Combine ginger, coconut milk, soy suce, sesame oil and chilli garlic sauce in a saucepan. Bring to boil over medium heat, stirring often. Boil gently to reduce until sauce is thick and measures about 1/2 cup (from 15-20 minutes), stirring often. If making ahead leave covered at room temperature or refrigerated. Immediately before serving add shrimp, snow peas, pepper and onions to hot sauce. Stir 2-4 minutes. Sprinkle with coriander and serve with lime over rice.
