HERB-ROASTED TURKEY BREAST
I use this paste on my whole turkeys as well. It gives the bird a great flavor.
ingredients
- 1 whole bone in turkey breast 6 1/2 to 7 pounds
- 1 T. minced garlic
- 2 t. dry mustard
- 1 T. chopped fresh rosemary
- 1 T. chopped fresh sage leaves
- 1 T. chopped fresh thyme leaves
- 2 t. kosher salt
- 2 t. pepper
- 2 T. olive oil
- 2 T. lemon juice
- 1 cup white wine

Preheat oven to 325 degrees. Place turkey skin side up in roasting pan. Mix all ingredients except wine in small bowl to make a paste. Loosen the skin from the meat, gently. Smear half the paste under skin and the other half on top. Pour the wine in the bottom of the pan.

Roast the turkey 1 3/4 to 2 hours, until skin is browned and turkey cooked to 165 degrees. If skin is over-browning, cover with foil. Slice and serve spooning juices over.
