Salmon Meatballs with Fresh Tomato Salsa
My kids love eating food that looks like a meatball!
ingredients
Tomato Salsa- 2 large tomatoes, seeded, peeled, and chopped
- 3 green onions, chopped
- 1 clove garlic, minced
- 2 Tbsp. chopped fresh parsley
- 1 Tbsp. olive oil
- 1 tsp. chopped fresh basil
- 1 tsp. red wine vinegar
- 1 lb. fresh salmon, chopped into 1/4 pieces
- 2 egg whites, lightly beaten
- 3/4 cup bread crumbs
- 3 Tbsp. golden raisins
- 3 Tbsp. chopped fresh parsley
- 2 Tbsp. Parmesan cheese
- 1/2 tsp. pepper
- 2 tsp. olive oil
- 6 cups arugula, torn into bite-sized pieces

Combine everything in a bowl. Season with pepper. Cover and set aside. Season with salt right before serving.

Salmon Balls
- 4
Combine all ingredients except for arugula and oil in a bowl. Mix well, and form into walnut-sized balls (about 16). Heat oil in large, non-stick pan over medium heat. Add balls and cook 4 to 6 minutes, turning to brown on all sides. Divide arugula onto four plates, and top with four balls, and serve with salsa.
