Lemon Garlic Chicken with Raisins
ingredients
- 2 tbs. olive oil
- 3 cloves garlic, minced
- 2 tsp. ground cumin
- 4 chicken breasts
- 1/4 cup lemon juice
- 2 cups sliced carrots
- salt and pepper
- 3 cups hot cooked brown rice
- 1/2 cup raisins
- 2 tbs. fresh chopped cilantro
directions
Heat olive oil in frying pan over medium heat; add garlic and cumin and saute about 2 minutes. Add chicken breastsa nd saute about 2 minutes to brown on both sides. Add lemon juice and bring mixture to a simmer. Cover and simmer for 20 to 30 minutes until chicken is fully cooked. Add carrots after 10 minutes. In separate bowl, combine carrots, rice, and cilantro. Serve chicken and carrots over rice mixture.
