Rita's Manicotti
ingredients
- 1 package manicotti
- Cook following package instructions but don’t overcook, they need to be firm.
- Rinse with cold water & place individually on a tray.
- Filling
- 1/4 cup butter
- 1/3 cup chopped onion
- 1 package frozen spinach – cooked, drained & chopped
- 3 cups ground beef (cooked)
- 1/2 cup parmesan cheese
- 1 cup ricotta or cottage cheese
- 1 egg
- In a large skilled sauté onion in butter. Stir in ground beef and cook until brown, seasoning to taste. Stir in spinach & cook until moisture gone. Remove from heat, add both cheeses, egg, add seasoning to taste.
- Fill noodles with filling.
- White Sauce
- 1/3 cup butter
- 1/3 cup flour
- 2 cups milk
- 1 tsp salt
- Heat milk until warm to the edge of a boil using sauce pan or microwave. Set aside.
- In a large sauce pan melt butter over low heat, add flour stirring and let bubble for a few minutes while constantly stirring. Remove from heat and slowly add heated milk, stirring well to avoid lumps. Add salt to taste and return to heat, stirring well until sauce thickens.
- Tomato Sauce
- Your choice of sauce, you can add basil and seasonings.

In a large corningware of pyrex dish, cover bottom with tomato sauce. Place filled manicotti noodles side by side. Top with white sauce, then tomato sauce. Sprinkle with parmesan cheese and parsley.

Bake at 350 F for 30-40 minutes.

Can be made ahead and kept in fridge or freezer.
