Skillet Gardner's Pie

ingredients

  • 2 pounds of gold or red potatoes
  • 1/2 cup soy milk
  • salt and pepper
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 2 large carrots, diced
  • 2 celery, diced
  • 8 oz mushrooms, diced
  • 2 cups of vegetable broth
  • 16 oz of kidney beans
  • 2 cups of green beans
  • 1 1/2 teaspoons of thyme
  • 2 teaspoons of rosemary
  • 1/2 teaspoon of sage
  • 2 cups of baby spinach
  • 1 tablespoon of cornstarch
  • 2 tablespoons of vegetable broth

    Scrub potatoes and cut into cubes. Place in large pot and cover with water. Bring to boil and simmer until tender. Reserve a cup of the water. Drain. Place in large bowl, add soy milk and mash until smooth, adding a little potato water if too dry. Add salt and pepper. Set aside.

    Spray large non-stick skillet with canola oil. Heat on medium high. Add onions. Saute until translucent. Add garlic, carrots, celery, and mushrooms. Saute for 3 more minutes.

    Add the vegetable broth, kidney beans, green beans, and herbs. Simmer on medium heat for 20 minutes. Add salt and pepper to taste. Add the spinach and stir until completely wilted. Mix the cornstarch with vegetable broth until smooth. Add to the mix. Cook and stir until the mixture has thickened.

    Spoon the potatoes evenly over the top and sprinkle with rosemary for garnish.
