Vegetable Stratta
Stratta or strata is a brunch casserole dish, similar to a quiche, made from a mixture which mainly consists of bread or hash browns, eggs and cheese. It may also include meat or vegetables. The ingredients are combined in a casserole dish and baked. It is served warm.
ingredients
- 1 loaf (12 oz.) - Day Old Bread
- 3 tbs - Unsalted Butter
- 2 tbs - Olive Oil
- 1 - Small White Onion
- 1 - Red Pepper - Seeded and Chopped
- 1 1/2 cups - Sliced Mushrooms
- 1 - Large Zucchini - Sliced
- 1/2 cup - shredded carrots
- 10 - Eggs
- 2 cups - Milk
- 1 tsp - Salt
- 1/4 tsp - White Pepper
- 1 1/2 cup - Shredded Monterey Jack Cheese, Divided
- 1/2 cup - Grated Parmesan Cheese

Spray a 13x9 ceramic baking dish with cooking spray. Slice bread in half and butter tops. Cut bread into 1-inch cubs.

In a skillet, heat the oil over medium high heat and add onion, red pepper, mushrooms, zucchini and carrots. Saute no longer than 3 – 5 minutes.

In a bowl combine eggs, milk, salt and pepper. To assemble, place bread cubes in a single layer in baking dish. Top with vegetables and one-half of jack cheese. Pour egg mixture over and top with remain jack and parmesan cheese. Cover and refrigerate for several hours or overnight.

Heat oven to 350° and bake uncovered 50 – 60 minutes until golden brown. Let stand 5 – 10 minutes before serving

***Breakfast meats can be substituted for any or all vegetables
