Tex-Mex Rice & Bean Casserole
If you use fat free or low fat ingredients this makes a healthy meal for those of watching our fantastic curves.
ingredients
- 1 can yellow corn, drained or frozen thawed corn kernels
- 1 tbl canned green chili peppers
- 15oz canned pinto beans drained and rinsed
- 1 C cooked brown rice (or white)
- 3/4 C (2 tbs additional for top)shredded mexican style cheese
- 3/4 C fat free sour cream
- 1/4 tsp chili powder
- 1/4 tsp salt
- 1/8 tsp black pepper
- 2 tbl scallions, chopped (dark green part only)
directions
Preheat oven 350°. Coat 2 qt glass baking dish with cooking spray. In large bowl combine: corn, chili’s beans, rice, 3/4 C cheese, sour cream, chili powder, salt pepper and scallions. Mix well. Spoon mixture into prepared baking dish and back cor 30 mins. Remove from oven and sprinkle with remaining cheese. Return to oven and bake until cheese melts. Let stand before slicing into 6 slices.
