Black Bean And Rice Burgers
Don’t sell this burger short! This is a great burger... holds up well on a bun and is about as wholesome as it gets. You have to try it or you won’t know what you are missing! Looking to dump some of the fatty beef? Give this a go!
ingredients
- 2 cups brown rice, cooked
- 1 (15oz.) can black beans, rinsed
- 1 cup cream style corn
- 1 small onion, chopped
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic
- salt and pepper to taste
- 2 eggs, slightly beaten
- 1/2-1 cup bread crumbs or oatmeal
- 2 Tbsp. chopped cilantro, optional
- hot sauce to taste, optional

Cook the brown rice and set aside to cool.

Drain the black beans and rinse. Give the beans a slight mash but do not completely mash. Add to the brown rice.

Add all the other ingredients, adding bread crumbs last. Add enough bread crumbs so that the patty will hold together well. Add the cilantro if that is your fancy and also the hot sauce to taste if you desire.

Fry the burgers in olive oil and eat alone or serve on a bun. Add mayonnaise to the top of the bun. Add some salsa to the top of the burger... or some cheese... ummm!

These bean and rice burgers really do taste good and it is nothing but nutrition. The next time you think about that fast food burger... eat one of these. You can have twice as much and it is much healthier for you.
