Filetto of Sole con Limone e capers
Filet of sole Francaise
ingredients
- 8 tbsp Vegetable oil or canola
- 4 sole filets
- 4 tbsp flour
- Sauce:
- 4 tbsp butter
- Pulp of one lemon, seeded and chopped
- 2 tbsp parsley
- 2 tbsp capers
- Pinch of pepper
- 1/3 cup of white wine

Heat oil in a frying pan. Coat each filet on both sides with flour and fry in the oil. When cooked place filets on paper towels to absorb excess oil.

In a sauce pan, melt butter and add lemon pulp, parsley, capers and wine and bring to a boil. Lower heat and let it simmer for 3 minutes.

Place cooked filets on a serving dish. When sauce is ready pour over filets and serve.
