Potato-Encrusted Salmon

Easy, delicious and low calorie.

  • 4 4-oz. salmon fillets, skin on

  • Salt and freshly ground white pepper to taste

  • 4 tsp. Dijon mustard

  • 2 large potatoes, peeled and grated (keep them in water until you use them so they don’t turn brown)

  • 1 Tbs. olive oil

  • Preheat oven to 425° F. Pat the fish dry with paper towels. Season the fish lightly with salt and white pepper. Generously spread the flesh side, not the skin side, of each fillet with the mustard and with enough grated potatoes to coat entirely. Cover the fish with plastic wrap and press the grated potatoes down onto the fish very firmly and tightly. Remove the wrap and season the potatoes with salt and white pepper.

  • Spray a dish with non stick spray and bake salmon for 20 minutes (until potato is browned and salmon is opague in center). Spray some non stick oil on the fish to help with browning.

  • I think this is about 6 points on weight watchers.
