Erin's Impeccably Texan Guacamole
This is my famous recipe for guacamole. My grandfather calls it the best he’s ever had, and that’s the best compliment I could ever get. I’m revealing my secrets in this recipe, so don’t tell!
ingredients
- 3 ripe avocados (they should give a little when you squeeze them, but shouldn’t be too mushy)
- 1 medium onion, milled until pieces are very small
- 1 T roasted, diced garlic
- 2 jalapeños, 1 seeded and 1 with seeds, diced
- 2 Roma tomatoes
- Garlic salt
- Black pepper
- White pepper
- 3 T chopped cilantro
- Juice of 1 lime
directions
Mash avocados in a large bowl with onion, garlic and tomatoes until mostly creamy, with a few small chunks of avocado left. Stir in jalapeños, cilantro, and lime juice. Season to taste with garlic salt, pepper, white pepper. Serve with tortilla chips.
