Spinach & Artichoke Dip
ingredients
- 1 stick butter
- 1 c finely chopped onion
- 8 oz cream cheese
- 8 oz sour cream
- 1 pkg (10 oz) frozen chopped spinach, thawed and well drained
- 1 can (14 oz) quartered artichoke hearts, drained and well chopped
- 1 1/2 c shredded monterrey jack cheese
- 1 c grated parmesan cheese
- Corn Chips or crackers

Melt butter in a large saucepan or skillet over medium heat.

Add onion and cook until soft, about 5 minutes. Stir in cream cheese and sour cream until smooth. Blend in spinach and artichoke hearts.

Add 1 cup of the monterrey jack cheese and 3/4 cup of the parmesan cheese.

Stir until well blended and heated through.

Pour mixture into a 1/2 quart casserole dish and top with remaining monterrey jack and parmesan cheese.

Bake in a 350 degree oven until cheese starts to brown (approx. 10 minutes)

Serve with corn chips or crackers.
