Cranberry Brie Appetizers Bites

- 1/4 cup sugar
- 1/4 cup water
- 1 1/4 cups fresh or frozen cranberries
- 1 tsp lemon juice
- 1/2 tsp grated lemon peel
- 24 wonton wrappers
- 1 8oz brie cheese

Combine the sugar and water in a small saucepan; bring to a boil. Add the cranberries; return to a boil. Reduce the heat; simmer 3-4 minutes, or until the cranberries pop and mixture thickens slightly, stirring occasionally. Remove from heat, stir in lemon juice and peel.

Press wonton wrappers gently into greased mini muffin cups, allowing ends to extend above cups. Spray edges of wonton wrappers with nonstick cooking spray. Bake at 350F for 12-14 minutes or until bottoms of cups are beginning to brown; remove from oven.

If desired, remove rind from Brie. Cut Brie into 24 cubes, about 3/4" each. Place 1 cube in each cup; place sheet of aluminum foil over each pan to prevent excess browning. Bake 3-5 minutes longer or until Brie is soft. Remove from oven; top each with about 1 teaspoon cranberry mixture.
