Dad's (IN) Famous Salsa
Adapt to fit your own tolerance for spicy foods, but it’s a good idea to make a spicy batch and a mild batch when you entertain. Again, jarred minced garlic works well in this recipe-but reduce the amount in half. Add additional if needed.
ingredients
- 3 lbs. ripe but firm tomatoes
- 2 jalapenos, diced
- 1 small sweet onion, diced
- (if only yellow onions are available, dice finely and sautee in 1 tbsp butter until soft)
- 1/2 bunch cilantro-leaves only
- 3 cloves garlic, pressed
- 1 tsp. vinegar
- 1 tsp. sugar
- 1/2 tsp. corriander
- 1/2 tsp. chili powder
- 1/2 tsp. cumin
- 4-5 drops chili oil
- 1 tsp. lemon juice
- salt and red chili flakes to taste
directions
Dice tomatoes. Seeds can be left in or removed. We just leave them in. Add remaining ingredients. Add salt and chili oil slowly-you can’t take it out! Adjust ingredients to taste. Serve with chips. We prefer an authentic Mexican, low salt version, but Lime Tostitos are also fabulous with this recipe.

Hints: Not a cheap recipe! Roma tomatoes are usually cheaper, and definately try Trader Joes. Produce prices there are usually way better on Tomatoes, Peppers and herbs like fresh basil.
