Garbanzo Bean Salad
ingredients
- 1/4 cup sliced green onions
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons lemon juice
- 2 teaspoons olive oil
- 3/4 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon ground coriander
- 2 cups seeded, chopped plum tomato
- 2 (19-ounce) cans chickpeas (garbanzo beans), drained
directions
Combine first 8 ingredients in a large bowl, and stir well. Add remaining ingredients, and stir gently. Serve chilled or at room temperature. 6 servings (serving size: 1 cup)
