Instant Guacamole
A very quick, very good guacamole. Cut out any brown parts of the avocado, and remove the pit by firmly inserting a knife in the pit horizontally, and twisting it free from the flesh of the avocado.
ingredients
- 2 avocados, soft but firm
- 1-2 cloves garlic, pressed
- 1/4 cup finely chopped and seeded tomato
- 1/4 cup finely chopped onion
- 1/2 tsp. red pepper flakes
- 3-4 drops “Franks’ Red Hot Original Pepper Sauce”
- 1 tsp. fresh lemon juice
- sea salt to taste
directions
Halve avocados and remove pit. Slice vertically and horizontally, taking care not to slice through skin. Use table spoon to remove sliced meat from avocado skin. Add remaining ingredients. Twist knife inserted in lemon (blade, not tip) slice (1/4 lemon) to juice, watching for seeds. Use potato masher to reduce size of avocado chunks to desired consistency.

Short cut: Buy pre-minced garlic in a jar in the produce section. Great addition to quick meals like pasta sauces, or mix with butter for garlic bread. For a creamier guacamole, add small amounts of sour cream (1 tbsp at a time) until you are happy.
