New York Style Cheesecake

ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup (1 stick) butter, melted
  • 1 cup sugar, divided
  • 2 lbs cream cheese
  • 2 large eggs, lightly beaten
  • 1 tsp vanilla
  • 2 tbsp cornstarch
  • 1 cup sour cream

    Prehat oven to 450°

    In a bowl, add graham cracker crumbs, butter, and 2 tbsp sugar; blend well. Reserve 2 tablespoons for garnish. Press remianing mixture onto bottom and sides of a greased 9 inch springform pan. Chill in freezer while preparing filling.

    In mixer bowl, beat cream cheese and remianing sugar until smooth and light. Beat eggs, vanilla and cornstarch, just until blended. Stir in sour cream. Pour mixture into prepared crust and bake for 10 minutes. Reduce oven temp to 200° and bake for 45 minutes. Turn off oven; allow to cool with door opened slightly, for 3 hours.

    Remove sides of pan; sprinkly with reserved crumbs and chill; serving with you favorite toppings.
