Wonderful Wild Rice Salad
This has everything a great salad has to offer. Plenty of grains, colorful vegetables... a power house of nutrition and flavor. Once you try this salad you will always come back to this one! This is not one of those bland wild rice salads... this one is great!
ingredients
- 1 cup wild rice, uncooked
- 1 cup brown rice uncooked
- 1 cup barley, uncooked
- 1 cup frozen peas, thawed
- 1 cup frozen corn, thawed
- 1 cup carrot, small dice
- 1/2 cup fresh parsley, chopped
- 1 cup dried cranberries
- 1 cup pecans, chopped
- 1 cup of cooked, chopped bacon
- Vinaigrette:
- 1/2 cup bottled Italian dressing
- 1/4 cup orange juice
- 2 teaspoons Dijon mustard
- 3 tablespoons balsamic vinegar

Rinse the wild rice and brown rice in a sieve under cold water. Add the barley and combine with cold water to cover by 2 inches in a large pot. Simmer, covered, until tender, approximately 45 minutes. Cool completely.

Make vinaigrette while rice is simmering. Whisk together the Italian dressing, orange juice, Dijon mustard and balsamic vinegar.

Assemble the salad: Stir together rices and barley, vegetables, vinaigrette, nuts, parsley, dried fruit and bacon bits. Adjust seasoning with salt and pepper to taste.

I don't think you could find more nutrition in any one place, than you can find right here in this salad. The best part is that this salad is absolutely delicious! You couldn't give your body a better treat than this!
