Oatmeal Cookies
These cookies use molasses and vanilla which gives them a sweeter taste than most oatmeal cookies.
ingredients
- 1 c. olive oil
- 1 c. (2 sticks) margarine or butter, softened
- 1c. firmly packed brown sugar
- 1/2c. white sugar
- 2 Tbsp. molasses
- 4 eggs
- 2 tsp. vanilla
- 1 c. whole wheat flour
- 2 c. unbleached white flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 6 c. uncooked quick oats
- 1/2 c. chopped walnuts
- 1 c. raisins or chocolate chips (optional)

1. Heat oven to 350°. Beat together oil, margarine, sugars and molasses until creamy.

2. Add eggs and vanilla, beat well.

3. Add combined flour, baking soda, cinnamon and salt; mix well.

4. Stir in oats, walnuts (raisins or chips if used)

5. Drop by tablespoonfuls on ungreased cookie sheet.

6. Bake 10 to 12 minutes or until golden brown. Cool one minute on cookie sheet; remove to wax paper.
