ingredients

  • 2 1/2 to 3 lb. fryer chicken, cut up
  • 1 c. of water
  • 1/4 c. chopped onion
  • 1 tsp. of celery salt
  • dash pepper
  • 1 c. long-grained rice
  • 1 16 oz. can cut green beans, drained
  • 1 can condensed cream of chicken soup
  • 1/2 c. milk
  • 1/4 c. mayonnaise or salad dressing
  • 1/2 c. grated parmesan cheese
  • 2 tbsp. chopped pimiento
  • 1/4 tsp. Worcestershire sauce
  • paprika

directions

Place chicken in electric skillet. Add water, onion, celery salt, and pepper. Cover and simmer with vent closed 20–30 minutes or until chicken is almost tender. Remove chicken. Measure broth in skillet, add enough water to broth to make 2 cups liquid. Stir uncooked rice, beans, soup, milk, mayonnaise, cheese, pimiento, and Worcestershire into broth in skillet. Add chicken. Cover, simmer 30 minutes or until rice is done. Sprinkle with paprika.
