Southwestern Strata
Prepare the day before for breakfast the following morning.
ingredients
- 8 ounces pork sausage
- 2/3 cup chopped onion
- 1/3 cup chopped green pepper
- 8 slices day-old bread, cut in 1" cubes
- 1 1/2 cups (6 ounces) shredded American cheese
- 1 1/2 cups (4 ounces) shredded Monterey Jack cheese
- 2 cups milk
- 4 eggs
- 3/4 cup mild salsa ranchero

Cook pork sausage, onion and green pepper in frying pan until sausage is brown and crumbly. Drain off excess fat; set aside.

Place half o bread cubes in buttered 2-quart rectangular baking dish. Sprinkle with half the sausage mixture and half the cheese. Repeat layers.

Combine milk, eggs and salsa. Pour over mixture in baking dish. Cover tightly with plastic wrap. Refrigerate several hours or overnight.

Remove from the refrigerator one hour before baking. Preheat oven to 325 degrees. Remove plastic wrap. Bake 50 to 55 minutes or until knife inserted near center comes out clean. Let stand 10 minutes.
