Nannie's Kale
Kale is a very healthy but underrated vegetable. Nannie and I (Lorie) loved this recipe - Nannie made it often when I lived at home. She always said, “Good, Good, Good!!”
ingredients
- 1 c chicken broth or 1 chicken bullion cube in 1 c of hot water to dissolve
- 2 Tbs olive or canola oil
- 2 lbs of kale or collard greens - Remembering - they shrink when you cook them so be sure to make a lot if need it. It probably shrinks down to about 1/3 to of it’s size.

Wash the kale thoroughly. Remove the leave portions from the stalks and tear the leaves into pieces. Put in pressure cooker and add 1 cup of chicken broth. Pour over kale; add pepper and 2 Tbs olive oil. Put lid and little “jigglier” on the top.

Turn heat up to high; when jigglier whistles turn heat down to med and cook for 10 minutes. Remember to release pressure before opening. To release pressure run pressure cooker under cold water until steam release the lid. Serve hot sprinkled with apple cider vinegar.

I’m sure this recipe could be cooked in a regular soup pot with a lid however, it will take longer to get the leaves tender.
