I use left over chicken, crab or shrimp. A favorte is using the crab meat and shrimp from our Seafood feast in Ocean City Maryland.

ingredients

  • Cooking Spray
  • 1 lb. or so crab meat
  • 1 to 1 1/2 lbs steamed shrimp, cooled, peeled and sliced in half or thirds
  • 1 lb or so shredded cooked chicken
  • 1 medium size jar of your favorite salsa. Adjust to amount of seafood or meat you have!
  • Chopped fresh cilantro
  • 2 cups or so of Kraft Mexican Blend shredded cheese.
  • 12 10 inch tortillas (whatever you like, flour, whole wheat, corn)

directions

  • 1

    Preheat oven 375 degrees

  • 2

In a large bowl, combine shrimp, crab and salsa. Add cilantro if you like.

  • 3

Heat skillet or griddle on medium heat. Place tortillas on one side for 15 seconds then the other and place on a cookie sheet. Top with crab mixture, then top with cheese. Place another heated tortilla on top of crab/cheese to form quesadillas.

  • 4

Continue until all mixture and tortillas are formed to quesadillas. Bake on a cookie sheet for about 5 minutes or until the cheese melts. Serve with your favorite sides!
