Quesadillas
I use left over chicken,crab or shrimp. A favorte is using the crab meat and shrimp from our Seafood feast in Ocean City Maryland.
ingredients
- Cooking Spray
- 1 lb. or so crab meat
- 1 to 1 1/2 lbs steamed shrimp, cooled, peeled and sliced in half or thirds
- 1 lb or so shredded cooked chicken
- 1 medium size jar of your favorite salsa. Adjust to amount of seafood or meat you have!
- Chopped fresh cilantro
- 2 cups or so of Kraft Mexican Blend shredded cheese.
- 12 10 inch tortillas (whatever you like, flour, whole wheat, corn)

Preheat oven 375 degrees

In a large bowl, combine shrimp, crab and salsa. Add cilantro if you like.

Heat skillet or griddle on medium heat. Place tortillas on one side for 15 seconds then the other and place on a cookie sheet. Top with crab mixture, then top with cheese. Place another heated tortilla on top of crab/cheese to form quesadillas.

Continue until all mixture and tortillas are formed to quesadillas. Bake on a cookie sheet for about 5 minutes or until the cheese melts. Serve with your favorite sides!
