Awesome with pork tenderloin

ingredients

  • 1 red onion (or white, yellow)
  • 2 tbsp butter
  • Drizzle of olive oil
  • 100 ml red wine
  • 100 ml orange juice
  • 2 tsp brown sugar
  • Splash of balsamic vinegar
  • Kosher salt

    Slice onion into rings (thin). Melt butter over med high heat in large fry pan and drizzle a little olive oil which will prevent the butter from burning. Sprinkle a little kosher salt. Allow to cook uncovered for about 15 minutes. Stir frequently to avoid burning.

    Cover and allow to cook another 15 minutes until the onion is soft. Add most of the orange juice, stir and conitnue to cook. The juice will absorb.

    Add a good splash of balsamic vinegar and the red wine, stir well and allow to cook more. The juice will need to boil down. Add more kosher salt. The confit needs to taste balanced so if too sweet or tart, add either more juice or more balsamic.
