Spicy Shrimp Pasta
This is good with a wide pasta like fettucine or pappardelle pasta.
ingredients
- 1 lb large peed and deveined shrimp
- salt and pepper to taste
- 1 tsp crushed red pepper flakes
- 3 tbsp olive oil
- 1 medium onion finely diced
- 1 14 1/2 oz. can diced tomatoes
- 1 cup dry white wine (preferably Sauvignon Blanc)
- 1/4 tsp dried oregano or 1 tbsp fresh
- 3 tbsp of fresh basil chopped
- 3 tbsp of fresh parsely chopped
directions
Toss the shrimp with salt, pepper, red pepper in a medium bowl. Heat olive oil in skillet over medium heat and add the shrimp mixture. Saute for about one minute or until shrimp are just done and remove from heat and set aside. Add onion to same skillet and saute about 5 minutes or until translucent. Add tomatoes with juices, the wine, garlic and oregano. Simmer about 10 minutes or until sauce thickens slightly. When ready to serve, add chopped parsley and basil and toss with hot pasta or your choice.
