Joan Mitchell's Cheesecake
This cheesecake is well loved and served at every BBQ at Joan and Tom’s.
ingredients
- 24 oz. cream cheese
- 1 lemon
- sour cream
- vanilla
- sugar
- graham cracker crumbs

Cream well to soften, 24 oz. of cream cheese
- 2
Add juice of 1 lemon, 2 heaping tbsp. sour cream, 1 tsp. vanilla and 1 cup sugar.

Beat until stiff and combine 5 egg whites with cheese mixture.

Pour into lightly greased spring form pan, lightly dusted with graham cracker crumbs on bottom and sides.

Bake at 350 degrees in middle shelf for 1/2 hour.

Turn oven off.

Gently spoon on topping. Let cool in oven, about 6 hours.

Set in fridge overnight.

Sprinkle with graham cracker crumbs on top.
