Chicken Stir Fry

ingredients

  • 4 chicken breasts cut in 1" squares
  • 1/3 cup cornstarch
  • 1/2 medium onion, sliced
  • 2 TBSP. brown sugar
  • 1 green pepper cut in 1" squares
  • 1/4 cup oil
  • 1 (16 oz) can pineapple chunks, save 1/4 cup juice
  • 2 TBSP. soy sauce

directions

Combine chicken pieces with plate of cornstarch, coat chicken well. Put oil in frying pan and add chicken (medium heat). While chicken is cooking, cut up onion and pepper. Stir chicken. Once browned, remove chicken and stir fry peppers and onions for about 3 minutes. In the meantime, put 1/4 cup pineapple juice in a bowl along with cornstarch and brown sugar and soy sauce. Dump rest of can of pineapple chunks and juice into skillet w/ vegetables. Add chicken. Dump pineapple juice mixture over top of chicken and cover, simmering on medium/low heat.
