Works with any vegetable or potato

ingredients

  • Mushrooms (assorted)
  • Red onions (quartered)
  • Peppers (red, green, orange) cut into 3/4 inch strips
  • Hungarian peppers (for heat)
  • Chopped garlic
  • Olive oil (generous to coat)
  • Oregano, basil, salt, pepper
  • Can use cauliflower, broccoli, cabbage, carrots, etc.
  • Potatoes (pre-cook for 5 mins by microwaving or boiling)
