Cornbread Taco Bake
Great dish for dinner with the kids!
ingredients
- 1# ground chuck/beef
- 1 envelope taco seasoning mix
- 1 can (15.5) hot chili
- 8 oz. package colby/jack shredded cheese
- 11oz. can mexican syle corn, drained
- 2 packages of corn muffin mix
- 2 TBLSP chopped jalpeno pepper-optional
- chopped olives and tomatoes
- sour cream and salsa for garnish
directions
Preheat oven to 375°. Cook ground beef, drain well. Add taco seasoning and prepare per package directions. Stir in chiloi and 1 cup cheese. Prepare corn muffin mix pe pakg directions. Add drained corn, cheese and jalpeno pepper. Spoon beef into 8 x 11 greased pan. Top with cornbread mixture to the edges. Bake 15-20 minutes or until golden brown. Cut into squares and serve with garnishments.
