Chocolate Mint Brownies
This is one of Bret’s favorites.
ingredients
- Brownie Layer:
- 1/2 C butter
- 1 C sugar
- 2 eggs
- pinch of salt
- 2 1oz. squares unsweetened chocolate, melted
- 1 tsp. vanilla
- 1/2 Cup flour
- 1/2 Cup nuts
- Mint Frosting Layer:
- 1 1/2 Cup sifted powdered sugar
- 3 Tbs. Butter
- 1 Tbs. cream
- 1/2 tsp. peppermint extract
- green food coloring for tint
- Chocolate Glaze:
- 1 large package semi sweet chocolate chips
- 1 Tbsp. butter
- 1/2 tsp. vanilla
- pinch of salt
- few tsp hot water if needed

Make the brownie layer: Cream together butter, sugar, and salt. Beat in eggs and vanilla. Blend in chocolate. Stir in flour and nuts. Pour into greased 9x13 pan. Bake at 350° for 25 minutes. Cool.

For mint frosting: combine the powdered sugar, butter, cream and extract. Tint with green food coloring. Spread over cooled brownie layer.

Glaze: melt the chocolate chips with the butter. Add the vanilla and salt. Add hot water if needed. Let cool, then spread over the mint layer.

Chill till firm
