Herbed Pork Loin
ingredients
- 3 to 4 lb. pork loin roast
- 1 large onion, sliced
- 1 lb. bag baby carrots
- 3 garlic cloves, minced
- 2 tsp. chopped fresh sage
- 1 tsp. chopped fresh rosemary
- 2 tsp. kosher salt
- 1/2 tsp. lemon pepper
- Chopped fresh sage(optional)

Preheat oven to 320oF. Place pork roast in shallow pan. Place sliced onion and carrots around roast; rub garlic, sage, rosemary, salt and lemon pepper into roast and sprinkle over vegetables.

Cover tightly with foil. Back 1 3/4 to 2 1/2 hours or until instant read thermometer inserted in center of mean registers 160oF. Let rest 10 minutes before slicing. Garnish with fresh chopped sage, if desired.
