Pasta Salad with Vegetables & Feta
A cold pasta salad with crisp veggies & feta cheese in an italian dressing. Quick and easy and wonderful on a hot summer day.
ingredients
- 1 pound rotini pasta, cooked, drained & cooled
- 1 cup chopped cucumber
- 1 cup quartered cherry tomatoes
- 1 cup chopped zucchini
- 1 cup chopped red pepper
- 1 cup chopped green pepper
- 1/2 cup sliced olives
- 1/4 cup diced red onion
- 1 1/2 cups crumbled feta cheese
- 1 cup italian dressing
directions
Toss all ingredients in a large bowl. Cover and refrigerate for 1 hour to let flavors blend.
notes
You can add, substitute or remove vegetables as you wish. This tastes best with homemade Italian dressing.
