Cedar Plank Salmon with Cucumber Dill Sauce
ingredients
Lemon Herb Salmon- 1 untreated cedar plank (soak cedar plank in water over night)
- 3-4 lb wild BC salmon fillet
- 2 shallots, diced
- 10 garlic cloves, minced
- 45 ml snipped fresh dill
- 45 ml chopped fresh time
- 30 ml chopped fresh cilantro
- 30 ml grated lemon zest
- 45 ml fresh lemon juice
- 5 ml grape seed oil
- salt&pepper rub to taste
- 1/4 English cucumber, finely chopped
- 1 ml sea salt
- 250 ml plain yogurt
- 125 ml sour cream
- 5 ml fresh lemon juice
- pepper to taste
- 3 green onions, finely chpooed white part only
- 10 ml chopped dill
directions
Cedar Plank Salmon

in a small bowl, combine shallots, garlic, dill, thyme, cilantro, lemon, zest and juice, green onion and oil.

Cover and place in refrigerator for at least 1 hour to allow the flavors to get acquainted.

Place salmon on cedar plank and sprinkle with salt and pepper. Cover with herb mixture.

Set plank on preheated BBQ and close lid. Bake for 30 minutes on medium heat, until fish flakes easly with fork.
Cucumber Dill Sauce
- 1
toss cucumber with salt and let stand for 15 min

combine yogurt, sour cream, lemon juice, pepper, onion and dill.

Drain water from cucumber and add to yogurt mixture.

serve in phyllo cups with salmon.
