Basic Pancakes

These are great and SO fast! You can mix together the dry ingredients in a huge batch and store it forever; just crack a few eggs and ladle in the wet stuff when you feel the need for hot pancakes. You can even use a Hello Kitty waffle press (pictured) to make them if you’re feeling cheeky.
I highly recommend the berry syrup with powdered sugar, but you can just as easily use fresh Grade-A maple syrup.

ingredients

Pancakes
  • 2 cups whole wheat AP flour, sifted
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 3/2 cups milk
  • 1/2 cup fat-free vanilla yogurt (if plain, add 1-2 tbs vanilla extract)
  • 2 tablespoons melted butter
  • 1 tablespoon canola oil
  • 1/2 lemon’s juice, freshly squeezed
  • 1 tablespoon lemon zest
Berry Syrup
  • 2 cups fresh or frozen berries
  • 1 cup fresh maple syrup
  • 1/2 cup jelly (pref. raspberry)
  • 1/2 lemon’s juice
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
