Apple and Turkey Sausage Dressing
I got this recipe from Pat and Gina Neely of Food Network, but I’ve added my own flair to it. My kids don’t eats pork sausage,so I substitute italian turkey sausage for their comfort. Plus turkey is delicious!
ingredients
- 1 tablespoon olive oil
- 1lb Italian sausage
- 1 med yellow onion, chopped
- 2 stalks celery, chopped
- 1 Granny Smith apple, peeled & chopped
- 1 teaspoon fresh chopped sage
- 1 teaspoon fresh chopped thyme
- 1/2 c burbon
- 1 1/4 lb store bought cornbread stuffing
- 2 cups turkey or chicken broth or stock
- 1/4 cup fresh chopped parsley
- 2 eggs, beaten
- salt and pepper to taste

Preheat oven to 350 degrees.

Heat olive oil over med-high heat in 12 inch skillet.

Cook sausage for 5-to-7 minutes until brown Add veggies and saute until soften. Add salt and pepper. Mix in apples, thyme, and sage and saute for another 2 minutes. Add bourbon. - Remove pan from flame. Allow to simmer until bourbon is almost evaporated, 1-2 minutes.

In a large bowl, add cornbread stuffing, parsley, chicken stock,and eggs. Mix well. Mix in vegetable mixture. Combine and stir well. Add to large casserold dish and bake for 30 minutes.
