SHREDDED PORK
Couldn’t find the exact match of the shredded pork dish you like from Fu Man Lou (Chinese restaurant at Tanjong Pagar). Hope this is as good!
ingredients
- 1. 5 oz (150g ) boneless pork fillet.
- 2. 3/4 oz(20g) pickled chili pepper.
- 3. 1/4 tsp. salt, or to taste.
- 4. 1 tablespoon soy sauce.
- 5. 2 teaspoons rice wine.
- 6. 4 teaspoons cornstarch (corn flour).
- 7. 4 tablespoons (50 millimeters) vegetable oil.
- 8. 2 teaspoons rice vinegar.
- 9. 4 1/2 teaspoons sugar.
- 10. 2 teaspoons scallion, chopped.
- 11. 1 teaspoon fresh ginger, chopped.
- 12. 1 tablespoon garlic, chopped.
- 13. 1/2 teaspoon pepper.

1. Cut the pork and chili pepper into slivers. Set the peppers aside. Mix the pork with the salt and 1 tsp. each of the soy sauce and rice wine. Mix with 1 1/2 teaspoons of the cornstarch and a few drops of oil and stir to coat.

2. Mix 2 teaspoons of the soy sauce, vinegar, sugar, the remaining 2 1/3 teaspoons of cornstarch, the remaining 1 teaspoon of rice wine , the scallion, ginger, garlic, pepper into a sauce. Set aside.

3. Heat the oil in a wok to very hot. Add the pork slivers and peppers and stir-fry until the pork is cooked through. Add the sauce the stir-fry about 30 seconds, or until blended and thickened. Remove and serve.
