Leftover Turkey Lasagna
ingredients
- 1/2 cup onion
- 1 zucchini
- 1/2 cup carrots
- 1 bell pepper
- 1/2 cup chopped mushrooms
- 2 cups crushed tomatos
- 4 slices ham
- lasagna flat noodles (whole wheat)
- turkey
- cottage cheese
- frozen chopped spinach
- low fat mozzarella cheese
- To taste:
- garlic
- parsley
- salt
- pepper

1. Sautee onion and all chopped vegetables. Add mushrooms and tomatos and sliced ham and garlic

2. Boil cooked turkey until soft and shred with a fork. Add to vegetables. May boil in chicken broth

3. Layer in a 9x13 casserole dish as such:

Vegetables and turkey

Chopped spinach

Uncooked noodles

Cottage Cheese

4. Repeat layering and end with cottage cheese. Sprinkle with mozzarella on top.

5. Cover and cook for 45 min at 350 degrees F. Uncover and cook for another 10 min.
