Mandarin Salad
This is a great salad to serve in the summer with some grilled pork chops and roast potatoes.
ingredients
- 1 head red leaf lettuce (or butter lettuce) – washed, dried, torn into pieces
- 1 cucumber, thinly sliced
- 1 avocado, thinly sliced
- 2 mandarin oranges, peeled sectioned (or 1 tin mandarin oranges, drained)
- 1/2 purple onion thinly sliced
- Combine all ingredients.
- Dressing:
- 1/2 cup canola oil
- 2 TBSP red wine vinegar
- 1 TBSP lemon juice
- 2 TSP Cointreau (can substitute juice from tinned oranges)
- 1/4 TSP salt

Mix dressing ingredients in blender or whisk until emulsified.

Pour dressing over top of salad and toss.
