Turkey Burger with Olives and Goat Cheese
These turkey burgers are packed with flavor from the herb goat cheese to the olive tapenade and Italian cheese that are mixed right into the burger.
ingredients
- 1/4 cup olive oil to wipe on grill
- Goat Cheese mixture:
- 1/2 teaspoon fresh ground black pepper
- 1 teaspoon chopped thyme
- 2 teaspoons chopped chives
- 2 teaspoons chopped cilantro
- 1 8 ounce log goat cheese
- Olive Tapenade mixture:
- 1/2 tablespoon chopped basil
- 1 1/2 cups pitted black olives
- 2 tablespoons capers
- 1/2 tablespoon chopped thyme
- 2 teaspoons minced garlic
- 1/4 cup plus 1 tablespoon extra virgin olive oil
- Burgers:
- 1 1/2 lbs ground turkey
- 1 1/2 cup grated Parmigiano Reggiano cheese
- 1 teaspoon chopped sage
- 1 teaspoon chopped oregano
- 1 egg, slightly beaten
- 6 kaiser buns, split
- Sandwich:
- 4 leaves any salad greens
- 1 large tomato, quartered

Wipe grill with olive oil and heat to medium high.

Combine first 4 ingredients of goat cheese mixture in a small bowl.

Roll out goat cheese and sprinkle on 1/2 of herb mixture, turn roll over and sprinkle on remaining herbs.

Roll cheese back up, wrap in plastic, and refrigerate until needed.

In a blender or food processor, combine all olive tapenade ingredients except olive oil. Using pulse button, process until coarsely chopped and well blended. With motor running add olive oil slowly.

In a large mixing bowl, place burger ingredients and olive tapenade then mix until blended well.

Shape into 6 round patties, grill 10-15 minutes or until done, turning once.

When burgers are almost done, place buns, flat side down and grill until golden brown.

Place buns on a platter and spread goat cheese mixture evenly on 6 halves of buns.

Place burgers on, add tomato and lettuce, then close sandwich and serve.
