Chicken Cacciatore
ingredients
- 2 1/2 pounds chicken pieces
- 2 Tbs olive oil
- 1 1/2 cups mushrooms (canned or fresh – your choice)
- 1 medium onion diced
- 1 clove garlic
- 1 14 1/2 ounce can diced tomatoes, undrained
- 6 ounce can of tomato paste
- 3/4 cup dry wine
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp crushed dried rosemary
- 1/2 tsp crushed dried thyme
- 1/4 tsp crushed dried oregano
- 1/8 tsp black pepper
- 1 Tbsp snipped fresh parsley
- Hot, cooked fettucini
directions
Flour chicken pieces and put in skillet with oil to brown. Remove chicken from skillet and add in mushrooms, onion and garlic. Cook until tender about 5 minutes. Return chicken to skillet. In a separate bowl combine the remaining ingredients then pout over chicken in skillet. Bring to boil, reduce to a simmer. Cook covered for 30-35 minutes turning once during cooking. Serve over pasta.
