Wu's Cashew Chicken
ingredients
- 2 tablespoons vegetable oil
- 1/2 teaspoon salt
- 1 cup sliced chicken breast
- 1/2 cup pea pods
- 1/2 cup whole button mushrooms
- 1/2 cup bamboo shoots
- 1 cup chicken broth
- 1/2 cup cooked cashew nuts
- 1/4 teaspoon sugar
- 1/2 teaspoon cornstarch
- 1/2 teaspoon water

1. Preheat the wok and swirl 2 tablespoons of vegetable oil around the bottom and sides, sprinke in salt and quick-fry the chicken for 2 minutes, then add pea pods, mushrooms, bamboo shoots and chicken broth, and cover and cook for 2 or 3 minutes.
