Wu's Cashew Chicken

  • 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • 1 cup sliced chicken breast
  • 1/2 cup pea pods
  • 1/2 cup whole button mushrooms
  • 1/2 cup bamboo shoots
  • 1 cup chicken broth
  • 1/2 cup cooked cashew nuts
  • 1/4 teaspoon sugar
  • 1/2 teaspoon cornstarch
  • 1/2 teaspoon water

    1. Preheat the wok and swirl 2 tablespoons of vegetable oil around the bottom and sides, sprinke in salt and quick-fry the chicken for 2 minutes, then add pea pods, mushrooms, bamboo shoots and chicken broth, and cover and cook for 2 or 3 minutes.

    2. Gently stir in the cashew nuts, M.S.G., and sugar, and thicken with a pre-prepared paste of 1/2 teaspoon cornstarch with 1/2 teaspoon water..
