Sweet Potatoe Casserole
ingredients
- 12 medium sweet potatoes
- 1/4 cup melted butter
- 1/2 cup brown sugar
- 2 Tbsp lemon juice
- 4 Tbsp. melted butter
- 1/2 cup sour cream
- salt and pepper to taste

Boil potatoes until firm in skins. Remove 6 potatoes, set aside, continue to cook remaining 6 potatoes until tender, remove and peel.

In large skillet combine 1/4 cup butter, brown sugar and 2 Tbsp. lemon juice. Peel 6 firm potatoes, slice and saute.

Peel fully cooked potatoes, put in a bowl with 4 Tbsp. butter, sour cream and beat until light and fluffy.

Line baking dish with sliced potatoes and put whipped potatoes in center.

Bake 20 minutes at 350°
