Bran Muffins
ingredients
- 1 cup wheat bran
- 1 cup boiling water
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1/2 cup vegetable oil
- 1 cup brown sugar
- 1 cup buttermilk
- 2 large eggs
- Optional:
- 1 cup raisins or dried cranberries
- 1 tablespoon orange zest
- 1 mashed banana

Preheat oven to 400 degrees. Grease two standard 12-muffin pans.

Stir wheat bran and boiling water together in a large mixing bowl. Let stand for 10 minutes to allow the bran to absorb the water.

Meanwhile, stir all-purpose flour, baking soda and salt together in another bowl. When the bran mixture has cooled, stir in vegetable oil, brown sugar and buttermilk.

Whisk in eggs.

Stir in raisins or dried cranberries and orange zest. Add the flour mixture and stir until dry ingredients are moistened. It will be thick. Do not overstir.

Add banana and gently fold it into the batter if you wish. The optional banana adds a nice texture and taste to the muffins.

Scoop batter into muffin cups. Bake 15-18 minutes or until lightly browned and a toothpick inserted into a muffin comes out clean.

Let cool on cooling rack for 3 minutes. Remove from pans.
