15 minute scampi
On the table in 15 minutes flat, can feed a crowd if doubled
ingredients
- 1 pound thawed cooked peeled shrimp
- 2 tbs olive oil
- 2 tbs butter
- 2 cloves minced garlic
- 1 large onion sliced
- 1 14oz can diced tomato
- 1 tsp dried parsley or basil
directions
Add oil to large deep skillet, slice onion and add to oil. Cook onion over meg-high heat until soft, add garlic and cook 1-2 minutes until fragrant. Add shrimp and tomatoes and heat through. Last add butter and basil and stir to combine. Serve over rice or apaghetti
