Grandma Kay's Carrot Cake
ingredients
- 2 cups flour
- 1 1/2 sugar
- 1 t. baking soda
- 2 t. cinnamon
- 1/2 t. salt
- 3 eggs
- 1/2 cup oil
- 3/4 buttermilk or sour milk
- 2 t. vanilla
- 1 (8 1/2 oz.) can drained pineapple
- 1 cup coconut (optional)
- 1 cup grated carrots
directions
Mix flour, sugar, baking soda, cinnamon, and salt. Beat egg. Add oil, buttermilk, & vanilla all at once to dry ingredients. Add drained pineapple, carrots, coconut, and nuts. Blend well. In a 9x13x2" pan, bake at 350 degrees for 45 minutes. Glaze hot cake with pineapple syrup and 1 t. of sugar.
