Spinach Artichoke Dip
ingredients
- 2 T unsalted butter
- 1 medium onion, peeled and chopped
- 6 cloves of garlic, chopped
- 1 pkg (10 oz) frozen chopped spinach, thawed and squeezed dry
- 1 jar (6 oz) marinated artichokes, drained and chopped
- 1 pkg. (8 oz) cream cheese, cut into cubes
- 1/2 pint sour cream
- 1 1/2 cups shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 tsp. paprika
- 1 tsp. black pepper
- 1/2 tsp. salt
- 1/4 tsp. red pepper flakes
- Chips to serve with

Heat oven to 350. In a large skillet, melt butter over medium heat. Add onion and cook for about 8 minutes, stirring occasionally, until golden. Add garlic and cook for about 1 minute. Stir in artichokes, cream cheese, sour cream, 1 cup of the cheese, the Parmesan, paprika,pepper, salt and red pepper flakes. Stir well.

Place dip in an oven-proof 2 quart dish and top with the remaining 1/2 cup of cheddar cheese. Bake at 350 for 10 minutres or until warmed through. Serve with chips on the side.
