Pumpkin Pie Cake

ingredients

  • Filling:
  • 3 large eggs
  • 2 cans pumpkin
  • 1 1/4 cups sugar
  • 1 can (12 or 13 oz.) evaporated milk
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 tsp. ginger
  • 1/2 tsp. cloves
  • 1/2 tsp. salt
  • Topping:
  • 1 package yellow cake mix
  • 3/4 cups (1 1/2 sticks) butter or margarine, melted
  • 1 cup pecans or walnuts, chopped

directions

    Mix together all ingredients for filling. Pour into 9x13 baking dish. For topping, sprinkle dry cake mix evenly over filling. Drizzle melted butter over top.

    Bake at 350 degrees for 30 minutes.

    Remove from oven, sprinkle nuts on top. Return to oven and bake 30 more minutes until topping is golden brown.

    (I put the pecans on top with the first baking and bake for 55 minutes. If nuts brown too much, cover with foil. This seems to work just as well and is a little faster.)
